Welcome to Wood Fired Flatbreads' menu!  While our menu is focused on pizza, we are also able to provide excellent salads, appetizers, small plates and desserts for those of you that desire a more extensive dining experience.  The menu included below is for our catering packages, when vending we will feature a limited selection from our menu.

The first section covers the sauces and toppings we offer.  Regardless of which catering package you are considering, all come with your choice of toppings.  In addition, there are optional sauces and toppings that may be added for an additional charge.  Next is a section on the specialty pizzas that may be added to a catering package - amazing pizzas, flatbreads and specialty dessert pizzas.  Following that is a section on salads, appetizers, specialty sodas and non-pizza desserts.

Sauces and Toppings

Each package includes a number of topping options.  Based upon the package you select, choose from the following options.  Additional sauces may be added as well, call us for feedback on how well the optional sauces may work with the toppings you select.

Sauces

Red Pizza (included)
We use a Stanislau Il Pizzaiolo base with added herbs and spices.  Great flavor, mildly spiced.

Crushed Tomato Sauce (included with optional Margherita pizza)
We use a Stanislau Cacciatore base with added herbs and spices.  Excellent fresh tomato flavor.

White (included)
House made with extra virgin olive oil, salt, fresh garlic and Parmesan cheese.  Very aromatic with great garlic flavor.

Basil Pesto ($3 per person, minimum 40 guests)
Basil, olive oil, pine nuts and Parmesan

Oil infused sage /rosemary ($3 per person, minimum 40 guests)
House made with extra virgin olive oil, fresh sage or rosemary.  Excellent with shrimp or vegetables.

Specialty Toppings

Specialty toppings are available for an additional charge - some toppings
require a minimum number of guests.

Avocado, sun-dried tomato, Kalamata olives, artichoke hearts, portabella or Crimini mushrooms, habanero peppers, jalapeno peppers, roasted peppers

Proteins
Ham, anchovy, jumbo shrimp, filet mignon, chicken breast, Italian tuna, capicola, prosciutto, meatballs, thick sliced bacon

Specialty Cheese
Fresh mozzarella, feta, ricotta, asiago, gruyere, cheddar, smoked gouda, brie

Specialty Pizzas 

Specialty pizza pricing is shown with two components - $3/$6.  The first price is the upgrade charge per person to include it as the one specialty pizza in the Grande package.  The second price is the charge per person to add it to either the Petite, Mezzo or Grande package.  Some specialty pizzas require a minimum number of guests.


Gorgonzola Filet     $4/$6 [minimum 35 guests]
Filet mignon, Crimini mushrooms, garlic infused oil, Asiago &  Gorgonzola cheeses  finished  with baby arugula, balsamic glaze and shaved Parmesan

Margherita     $-/$3 [no minimum]
Garlic Parmesan oil, crushed San Marzano tomatoes, fresh mozzarella and fresh basil

Apple Sausage with Sage     $2/$5 [minimum 40 guests]
Sausage, sliced apples and cheddar cheese with sage infused oil

Rosemary Shrimp     $4/$6 [minimum 35 guests]
Jumbo shrimp, rosemary infused garlic oil, lemon, and our three cheese blend finished with fresh rosemary and lemon zest

Fire Roasted Vegetables     $-/$3 [no minimum]
Fired Roasted fresh vegetables of the season, garlic parmesan oil, our signature four cheese blend and smoked Gouda

BBQ Chicken     $-/$3 [no minimum]
All natural Chicken breast, smoky BBQ sauce, red onion, cheddar cheese and fire roasted corn

Mediterraneo     $-/$3 [no minimum]
Fresh spinach, mushrooms and sun dried tomatoes with basil pesto, feta, and our signature four cheese blend

Jamaican Jerk Chicken     $4/$6 [minimum 50 guests]
Jerk chicken, cheddar cheese, bell peppers, red onion and pineapple finished with fresh cilantro, jerk drizzle and lime wedges

Fresh Spinach and Mushroom     $-/$3 [no minimum]
Fresh spinach, mushrooms, garlic Parmesan oil and nutmeg ricotta

Tennessee Pig   $1/$4 [minimum 50 guests]
Smoked bacon and smoked Gouda cheese are drizzled with Jack Daniels infused pure maple syrup and topped with walnuts and dabs of ricotta cheese

We created these pizzas for our weekend morning farm markets and
people really loved them

French Toast with Pecans & Grand Marnier     $-/$3
Ricotta cheese, eggs and pecans are topped with caramelized brown sugar and finished with a Grand Marnier maple syrup

Smoked Salmon & Capers    $4/$6 [minimum 35 guests]
Asiago cheese, capers, fresh tomatoes, slivered red onion and smoked salmon finished with a creamy goat cheese drizzle

Brunch Omelets   $-/$3
Fresh eggs whisked with cream and the cheese and toppings of your choice are fired in the oven and fluff up to make an incredibly fluffy omelet pizza

Garden Vegetable Omelet     $1/$4 [minimum 35 guests]
Fresh eggs whisked with cream, fresh tomato, asparagus and mushrooms are fired then finished with a lemon cream drizzle

Fresh mozzarella balls, cherry tomatoes and basil drizzled with olive oil and an aged balsamic reduction

A selection of Italian meats, cheeses, marinated vegetables and olives served with crostini

Wood Fired Cauliflower $160    (serves 40)
Fresh cauliflower are tossed in olive oil, salt and fresh herbs then we fire roast them in the oven.

Meatballs in savory tomato sauce    $160   (serves 40)       
Fresh Wood firing the meatballs in our cacciatore sauce takes a good meatball and makes it great!  We get a lot of compliments for our meatballs.
